Magic Kingdom: If you both have never been and want to do a lot of the classic rides, and don't mind a lot of kids
Epcot: If you want to enjoy the world showcase, lots of walking, but only a handful of good rides
Hollywood Studios: The park is very small, but has a roller coaster, tower of terror, and the new Toy Story 3D ride (which is ALOT of fun) We went in July and we were done with this park by 1pm.
Animal Kingdom: ALOT of walking, and this park gets really really hot even in the cooler months. Has a few very fun rides, and a couple good shows.
My husband's favorite park is Animal Kingdom, he like the Everest Ride and Dinosaur. My favorite is Hollywood studios even though its small (I like not having to walk a lot from one ride to the other). We did one day at Epcot when we were newly married, and my husband HATES that park. He finds its boring. We have planned a 6 day disney vacation for April because of disney's "military salute" we are very excited.
Each park there offers something different. The Magic Kingdom has the most attractions and is the park most people visit. If you want more thrill rides, then I'd go for Hollywood Studios, which has Tower of Terror and Rock n Roller Coaster. Epcot has alot to see, like the World Showcase, but not a ton of rides. Animal Kingdom is probably my favorite and obviously has attractions having to do with animals and wildlife, like the safari, but it does have some fun rides. So if you want to get the most out of the birthday ticket and want the real Disney experience, I'd probably go with Magic Kingdom or Animal Kingdom. Personally, I think if you have never been, you need to go to Magic Kingdom. It's just classic Disney magic! There are lots of rides, and most are fun for all ages. There's a "kiddie" section called Toontown and a somewhat "kiddie" section called Fantasyland, but really even these areas have things you can enjoy! If you can enjoy acting like a kid, I recommend it! And the fireworks are amazing. Nobody does fireworks like Disney!
Otherwise, if that sounds too "kiddie" for you, I would recommend Hollywood Studios. It has several rides that are not even remotely for kids - try Tower of Terror and Rock N Roller Coaster especially. I know it's my imagination, but it seems to me like there are fewer kids here. Also, it's a smaller park, so you can thoroughly cover this park in a day. At Magic Kingdom, you probably won't come close to doing it all, so you may feel like you missed a lot.
i would agree with everyone else that magic kingdom has all the classics but is a bit more geared towards children.
i think it should be between epcot and hollywood studios for you guys. animal kingdom is a glorified zoo. it has like three rides and a few shows.

epcot's pretty booring.. lots of shows.. not many rides.. good for learning lol
magic kingdom has a lotta rides but they'e kinda kidish compared to universal studios.
animal kingdom's alright.. i just remember being wet from one of those rides for the whole day haha
imo, i liked hollywood studios becuase of the rocking rollar coaster and tower of terror... those were my highlights of disneyworld =]
