I'm not sure if "least popular" is the right term... but I think I understand what you mean. I'm assuming you mean off-peak, cheapest, least crowded, right? :)
The best times to visit the Walt Disney World Resort are between these times:
Late January - early May
Late September - mid December
Avoid holidays and weekends if you want to steer clear of crowds. The time you are considering is a great idea - crowds will be relatively low and the weather will still be warm, but not unbearable like it is in the summertime.
My two favorite Disney Resorts are the Animal Kingdom Lodge and Disney's Polynesian. Both are huge, have beautiful architecture, amazing views, amazing food, great shopping, activities for the kids, and a lot more!

My best trips to Disney World have all happened in mid January. People are paying off Christmas and kids have gone back to school. I strongly recommend renting a house or condo as well. Everyone gets their own room, you have the luxury of cooking your meals (a big money saver) and the quiet and privacy are invaluable. Also look into a hopper pass as you can change back and forth between the parks. I often spend a half day at MGM and one and a half at Epcot.What is the Least Popular time to go to Walt Disney World?
Go during the school year, because it will be packed on holidays/summer. Try to go on a week day, because all of the Floridians will be in school/work. The best time to go is when most people are in school. This is true for anyother vaction spot. It is pretty cool during Christmas. There is a lot going on...Plus, the park looks pretty! ;)
According to the Walt Disney World website, these are the times of lowest attendance...
January (except New Year's Day) until just prior to Presidents' week in February
The week following Labor Day until just prior to Thanksgiving week
The week following Thanksgiving until the week prior to Christmas
The best Resort to stay at is Disney's Polynesian Resort. It has the highest return rate of all the other Disney Resorts and it's one of the original Resorts that opened with the Magic Kingdom on October 1, 1971. The Hawaii Concierge Longhouse is so wonderful. Room 1516 has the best view on property - Disney's Grand Floridian Resort %26amp; Spa to the left, the Magic Kingdom and Cinderella Castle straight across, and Disney's Contemporary Resort to the right, all across the Seven Seas Lagoon.
Here's some information about the suites...
Suites: maximum 5-9 Guests
Stay in a one bedroom with separate sitting area and wet bar (sleeps 5); two bedroom Princess with 2 baths, separate sitting area and fridge (sleeps 9); or King Kamehameha with 2 stories, 2 bedrooms, 3 1/2 baths and kitchen (sleeps 6).
* One Bedroom from $700
* Two Bedroom (Princess) from $1,232
* Two Bedroom (King Kamehameha) from $1,850
Now, people often think that Disney's Grand Floridian Resort is the best, most expensive Resort with the best suites, just because it's Walt Disney World's Flagship Resort, but that's untrue. As I've already stated, Disney's Polynesian Resort has the highest return rate, so that means Guests like it better than any of the other Resorts. The suites are much better, too.
Here's some information about the suites at Disney's Grand Floridian Resort...
Suites: maximum 2-8 Guests
Stay in a one bedroom with 2 baths and separate sitting area (sleeps 2-4); two bedroom with 1 1/2 baths and separate sitting area (sleeps 4-8); or Presidential with 2 bedrooms, 2 baths, living room and hospitality bar area (sleeps 4).
* One Bedroom from $1020
* Two Bedroom from $1705
* Presidential from $1840
Disney's Polynesian Resort's nicest suite is slightly more expensive than the nicest suite at Disney's Grand Floridian Resort. My boyfriend and I always stay at Disney's Polynesian Resort. It's so beautiful, it's our favorite. And the staff is so wonderful. We were upgraded to Concierge for free when went in August (the room we were upgraded to would've cost over an extra thousand dollars!) and they gave us gift baskets and special little gifts almost every night of our stay. It was the best vacation we've ever been on. We can't wait to go back this summer.

I went right before Christmas. Around the 15th of December and it was so dead. I went to Universal as well and was pleasantly surprised by the short lines. I am a fan of DoubleTree in downtown Disney. It is a central location between Disney, Universal, and shopping. Plus you can walk to downtown Disney which has a lot of shops and entertainment.
